Applesauce honey muffins

So, it’s the Jewish New Year right now (ish. I’m still trying to figure out how it all works, hehe!). So happy new year! Since we all should be warring, starting today, I figured I’d post a bit of a pick me up snack.

1 3/4 c flour
1 1/4 tsp baking soda
1/8 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp chinese 5 spice
1 tablespoon egg replacer (dry, don’t bother mixing it with the water. I never do)
1 apple, cored, peeled if you want, and diced
2 cup unsweetened applesauce (Sweetened would work, but the muffins turn out much sweeter that way)
2 Tablespoons canola oil
1 cup honey

So I started out with this recipe, but you know, I can never leave good enough alone.
Mix all the dry stuff together, then dump in the wet. If it still looks dry, add a little more apple sauce until it is all combined nicely (Our measuring cups were all in the sink from dinner the night before, so I was eyeballing measurements!) Bake it up in a muffin tin at 350 for ~20-30 minutes, or til a toothpick comes out clean (Or until you press down and have good resistance, but that’s not very scientific).

Makes 6 large muffins, easily doubles.
There will be a picture here next time I make them. They vanished too quickly this time!!
